Well, we’ve almost made it through Week 2 and when I weighed in this morning… 7 pounds!!! Man, this really works when you stick to it, I am seriously motivated now! Tomorrow is cheat day, so I took the leftover gumbo out of the freezer, and I can’t wait to have some… RICE! HaHa
I have to be honest, for the past three days, I’ve been using honey in my coffee. Even so, I still lost weight. I use local honey for my sinuses and my digestive health. Maybe it helped me lose weight, too!
School is keeping me so busy I barely have time to cook, but I made some chicken last night and Nomenom! I bought a cast iron dutch oven a couple of months ago, and it really makes a difference in the flavor and juiciness of my cooking. I would surely recommend the investment!
I had a family pack of boneless, skinless chicken thighs, so I seasoned them with salt, black pepper, and Cajun seasoning. In my new cast iron Dutch oven, on medium/high heat, I heated one stick of butter (real butter, not margarine) until it was simmering and put in three pieces of chicken. Let them cook for three minutes per side on medium heat.
When all of the chicken is browned, set it aside. I added another stick of butter, garlic, and sliced onions. Stir that real good and then add the chicken back to the pot.
I didn’t cook down the onions before adding the chicken so that when it’s done, the onions will still be visible and chewable, not dissolved. Let that heat till it simmers, then stir and cover.
Let the chicken cook at medium/low heat for 15 minutes. Stir gently every few minutes.
Winner, winner, chicken dinner! And easy peasy! And on my diet!!!

- 1 family pack boneless, skinless Chicken Thighs
- 2 sticks real Butter
- Salt, Black Pepper, Cajun Seasoning (to taste)
- 2-4 sliced Onions
- 5 toes pressed Garlic
