Fried Chicken Wraps 

I’m actually getting to cook for my boys tonight… they have been out-of-town since Thursday and should be home shortly!!

I’ve got some chicken tenderloins defrosted, and I’ve seasoned them with salt, pepper and Cajun seasoning. I’m going to tell you my number one secret, I use a seasoning made right here in Louisiana. We are so lucky here to have access to the best in the world! I can’t give you the name of the company because they custom blend this particular product. Any Cajun seasoning will do.

I use an old pot to fry in so don’t judge when you see the pictures! There has to be enough room for the chicken to deep-fry, so I pour vegetable oil in the pot, about 2 inches deep. The oil needs to be 350 degrees, minimum.

While waiting for the oil to heat, I place 4 or 5 tenders in Chicken Fry that I have put in a container. I don’t use an egg wash or anything like that because we like the way they come out without it. Dredge the tenders in the Chicken Fry, making sure that every nook and cranny is coated. I let my chicken sit for a couple of minutes so that the batter sticks when it goes into the oil;  a trick my dad taught me.

I fry them for a total of 6 to 8 minutes depending on the thickness. There’s a tray with paper towels ready for draining the cooked tenders.

Well, the tortillas I had in the pantry are green! There must be a hole in the bag because they are not that old!! So… I just sent my husband to the grocery store.

That gives me time to cut up some lettuce and tomatoes, fresh from my mom’s garden! We dress our wraps with whatever there is on hand. I have some cheddar cheese and some leftover taco sauce packets from fast food!

All that’s left is to put it all together! Here’s mine!!! After it’s wrapped up, I zap it in the microwave for about 20 seconds. Yum! By the way, the next one I made had two pieces of chicken!!
